Broccoli Carrot Potato Cake

Broccoli is a very good source of dietary fiber. It helps you to reduce cholesterol after having so much greasy food at Chinese New Year.

Step 1
Preheat the oven to 200°C.

Step 2
Clean and chop the broccoli and carrot into pieces. Peel and shred the potato and soak in water for 5 minutes. Drain and squeeze off the liquid. Chop the green onion.

Step 3
In a bowl, mix together the broccoli, carrot, shredded potato, green onion, bread crumb, egg, salt and black pepper. Divided the mixture evenly and form into a patty.

Step 4
Brush some olive oil on the baking pan, place the patty and bake it for 10 minutes. Flip it over and bake it for another 5 minutes until golden brown.

Step 5
Serve with plain yogurt.
