Winter is the time when chestnut harvest. Besides the street food Stir-fried Chestnut, chestnut stew is popular as well. This time we use chestnut to cook with pork knuckle which full of collagen. Plus the sweetness of the carrot which make into a delicious rice dish.。

Step 1
Cut the carrot into pieces.

Step 2
In a bowl, marinate the pork knuckle with Chinese cooking wine, sliced ginger, white pepper and salt for 20 minutes.

Step 3
Place the star anise, bay leaf, cumin seeds, ginger in a fish bag.

Step 4
In a pan, add oil and cook the pork knuckle for 2-3 minutes, transfer to the pot.

Step 5
In the pot, add the rock sugar, light soy sauce, spices bag, chestnut and water to cover the ingredients. Bring it to boil over high heat then reduce the heat to low. Cover the lid and cook it for 60

Add the carrot and cook for another 30 minutes until chestnut and carrot are tender.
