Braised Pork Hock with Rock Sugar and Cinnamon

Step by Step Instructions

Step 1
Slice the ginger and cut the green onion into section

Step 2
Cut the carrot and leek into pieces

Step 3
In a pot, add enough water to cover the pork hock

Step 4
Add salt, peppercorn, carrot, leek, garlic and bring it to boil over high heat

Step 5
Reduce the heat to medium, cover the lid and cook it for 30 minutes. Remove the pork hock from the pot

Step 6
Heat up a shallow pan over medium high heat, add some oil and sauté the ginger and green onion until fragrant

Step 7
Add star anise, cloves, bay leaves, cinnamon stick and sear the pork hock until golden brown

Step 8
Add Chinese cooking wine, light soy sauce and dark soy sauce

Step 9
Add water about ½ way of the hock. Add rock sugar and bring it to boil over high heat

Step 10
Reduce the heat to medium and cover with lid. Cook it for hour and a half until tender
