Braised Pomelo Peel with Shrimp Roe

Step 1
Pomelo peel

Step 2
Cut the pomelo skin into large wedges. Slice off the outer layer (green part) of the peel

Step 3
Blanch the pomelo skin for 5 minutes

Step 4
Keep sqeeze the pomelo skin to get rid of its natural juices

Step 5
Soak the pomelo skin in water (room temperature) for 3 days

Step 6
When the broth is boiling, add pomelo skin and oyster sauce. Simmer on medium heat for an hour

Step 7
Once the pomelo skin is nice and soft, we begin to adjust the color of the sauce with dark soy sauce

Step 8
Pour the sauce on top and sprinkle with shrimp roe
