Braised Oxtail with Red Wine Sauce

Step by Step Instructions

Step 1
Chopped the onion, carrot, celery, leeks in a medium size

Chopped the garlic and shallot

Step 3
In a heavy pot, add butter and melt

Sear the oxtail until golden brown on both sides

Remove the beef and set aside

In the same pot, add the garlic, shallot and the vegetable. Sauté until fragrant

Deglaze with beef broth and add the oxtail back

Bring it to boil, then add the bay leaves and red wine

Bring the liquid back to boil, add the tomato paste and seasoning

Then turn off the heat and cover with a parchment paper

Preheat oven to 180°C and braise it for 3 to 3½ hours or until the meat is tender

Whisk in about 1 tablespoon of cold butter
