Step by Step Instructions

Step 1
Soak the mushroom and scallop until soft, drain and set aside

Step 2
Clean the goose feet and add about 1 teaspoon dark soy sauce and mix tog

Step 3
In a pot, add enough oil for frying. Deep fried the goose feet until golden brown and transfer to another pot

Step 4
Add the chicken broth with in the pot with the Chinese cured ham and cook it for 2 hours on medium heat

Step 5
Add the mushroom and scallop and cook it for another 30 minutes

Step 6
Use the remaining of the broth and combine with the seasoning

Step 7
Blanch the lettuce with some oil and salt, drain and transfer to the serving plate

Step 8
Add the seasoning mixture until the sauce is thicken
