Braised Glutinous Rice with Shrimps

Step by Step Instructions

Step 1
Wash the defrosted cooked shrimps. Pat dry and save 4 pcs for rice-frying later. Set others aside.

Step 2
Add oil to the pan, fry the boiled shrimp to golden brown color on medium high heat. Break the shrimps into pieces while frying to release aroma.

Step 3
Boil a pot of water. Transfer the fried shrimp pieces into the boiling water immediately and cook for 10-15 mins until the soup becomes rich.

Step 4
Filter away the shrimp pieces. Set aside.

Step 5
After soaking the clams, put them in cool water and blanch until they are opened.

Step 6
Dice the ginger and mushroom. Set aside.

Step 7
Rinse the cooked glutinous rice over cool water. Drain it and set aside.

Step 8
Fry the shrimps & scallops till golden brown. Set aside.

Step 9
Saute the ginger, dried shrimps & crab meat until fragrant. Add in glutinous rice, mushrooms & sugar snap peas and fry thoroughly.

Step 10
Add shrimp bisque and stir well.

Step 11
Season it with salt, sugar & chicken bouillon.

Step 12
Put the shrimps, scallops & clams back to the rice. Simmer the rice until the bisque is absorbed.

Step 13
Garnish with green onion.

Step 14
Decorate with Japanese dried shrimps to taste.
