Braised Chicken with Mushroom and Noodle

Braised Chicken with Mushroom and noodle is a famous Northeast China winter dish. There is not much vegetable supply around that area. So the farmers use to pick the wild hazel mushroom to make the chicken stew plus the noodle which will absorb the sauce. The sauce is good to go with rice. If cannot find the hazel mushroom also can choose different types of mushroom.

Step by Step Instructions

Step 1
Clean the chicken and cut into pieces.

Step 2
Clean and cut the mushroom. Soak the dried noodle in warm water until soft.

Step 3
Peel and slice the ginger. Cut the leeks and cilantro into section.

Step 4
In a pot, add enough water and blanch the chicken for 3-5 minutes, drain and set aside.

Step 5
In a pan, add oil and sauté the ginger and leeks until fragrant. Add the chicken and cook until golden brown.

Step 6
Add the dark soy sauce, Chinese cooking wine, sugar and quick stir.

Step 7
Add enough water to cover the ingredients. Add star anise, bay leaves, mushroom and bring it to boil over high heat. Reduce the heat to low, cover the lid and cook it for 30 minutes.

Step 8
Add the noodle, mix well and cook for 5-10 minutes until the noodle is soften. Season with salt.
