Braised Chicken Thigh with Lotus Root

Step by Step Instructions

Step 1
Chop the shiitake mushrooms, lotus root, white of green onion, boneless chicken thigh, pickled pepper and bell peppers. Side aside.

Step 2
Marinate chicken thigh with ginger, white of green onion, light soy sauce, salt and Chinese cooking wine for 20 minutes.

Step 3
Heat some oil in a pot. Add shiitake mushrooms and lotus root. Stir until half-cooked on medium heat and set aside.

Step 4
Heat some oil in a pot again and add chicken. Stir on high heat until golden brown and water evaporates.

Step 5
Add pickled pepper, dried chilies, hot pot soup base, shiitake mushrooms, lotus root, bell peppers and sugar. Stir well.

Step 6
Add some water to cover the ingredients. Cook for 10 minutes until sauce is thickened. Ready to serve.
