Blanching is an easy cooking technique used in this Cantonese dish; whereby some oil and seasonings will be boiled with the water to increase the taste and appearance of beef. Blanched dish would usually be accompanied by a sauce or two to be served together. For this dish, the sauce will be fried shrimp paste, ginger and green onion with oyster sauce, or any other combinations of your personal preferences.
