Black Truffle Brown Rice with Pumpkin & Sea Urchin Sauce

Step 1
Put pumpkin, sea urchin and milk into the blender and blend until smooth.

Step 2
In a pan over medium heat, melt the butter and sauté the onion until fragrant.

Step 3
Pour in chicken stock and bring to simmer. Add the pumpkin sauce and stir well.

Step 4
Add brown rice and cook for 3 minutes until the sauce is thickened.

Step 5
Add 2 tsp of black truffle sauce and sprinkle some Parmesan cheese. Stir well and off the heat.

Step 6
Top with more sea urchin and black truffle sauce when served. Enjoy!
