Black Truffle and Chocolate Cheesecake

Step 1
Preheat the oven to 160°C. Wrap the bottom of 6’’ spring form pan with 3 layers of foil. Mix together the digestive biscuit crumbles, cocoa powder and unsalted butter. Press into the spring form pan to form crust. Refrigerate for 30 minutes or until set.

Step 2
Blend cream cheese with a blender until soft. Add caster sugar blend together. Add La Rustichella Black Truffle Paste, egg, vanilla extract, whipping cream and blend until soft and smooth.

Step 3
Melt dark chocolate in a double boiler. Add the black truffle mixture bit by bit and mix well.

Step 4
Pour into the spring form pan. Place on the baking tray. Add hot water to the tray until it reaches 1/2 height of the pan. Bake for 45 minutes or until completely cooked. Let cool and refrigerate for 2 hours.

Step 5
Prepare the chocolate glaze. Melt chocolate glaze in a double boiler. Pour over the cake and lest rest until the glaze is set.
