Black Tea Braised Pork Knuckle

Black tea is very healthy and has a stronger flavor than the less oxidized tea. It goes well with pork knuckle while onion gives an extra sweetness to the dish.

Step 1
Cut the onions into pieces and green onions into sections.

Step 2
Bring a pot of water to boil. Add half ginger and green onions, rice wine, vinegar and pork knuckle. Blanch the pork knuckle for 3 minutes. Transfer to ice water, let cool and set aside.

Step 3
In a pan, add some oil on medium heat. Add the remaining ginger, onion and sauté until fragrant.

Step 4
Add pork knuckle and stir-fry for 3 minutes. Add star anises, cinnamon sticks, rock sugar and stir-fry for 3 minutes.

Step 5
Add the remaining green onions, Sichuan pepper, light soy sauce, black tea bags and water. Bring to boil, cover the lid, reduce to medium low heat and cook for 1 hour.

Step 6
Remove the tea bags and cook for 20 minutes. Ready to serve.
