Black Fungus and Pickled Radish Egg Frittata

Black fungus is a health tonic. It helps with blood circulation. It has a cooling effect on the blood and promotes circulation. Adding pickled radish improves the mouthfeel of the Frittata.

Step by Step Instructions

Step 1
Soak the black fungus until soft. Drain and slice.

Step 2
Soak the pickled radish in water for 20-30 minutes. Change the water every 10 minutes. Drain and dice it.

Step 3
In a bowl, beat the egg and season with salt and white pepper.

Step 4
In a non-stick pan, add some oil on a medium high heat. Sauté the garlic until fragrant.

Step 5
Add the pickled radish, black fungus and cook for 2 minutes.

Step 6
Add the egg and reduce the heat to medium. Cook until golden brown in the bottom.Sprinkle some chopped green onion and cilantro evenly over the egg.

Step 7
Flip it over and cook until the other side is golden brown and the egg is completely cooked.

Step 8
Transfer to the plate, garnish with extra chopped green onion and cilantro. Ready to serve.
