Bittersweet Chocolate Mousse

There is lots of variety on chocolate desserts, choosing different percentage on cocoa to create a different taste. This time choose the bittersweet chocolate, its bittersweet taste gives another layer of flavor.

Step 1
Soak gelatine sheet into ice water until soften. Drain and set aside

Step 2
In a pot, add 100mL whipping cream, bring it to simmer then remove from the heat. Add the soften gelatine sheet and whisk until dissolve

Step 3
Pour the mixture in the chocolate and whisk until the chocolate is melted

Step 4
In another mixing bowl, combine the remaining cream and sugar. Whisk the cream until sightly thicken

Step 5
Pour in the chocolate mixture, vanilla extract and salt mix well

Step 6
Transfer the mixture to the serving glass and refrigerate until it set
