Bitter Melon Black-eyed Pea and Spare Rib Soup

Step 1
Seed and cut the bitter melon into pieces. Rinse and pat the spare ribs dry. Rinse and chop the pickled mustard cabbage. Rinse the black-eyed peas and set aside.

Step 2
In a pot of water, add spare ribs and bring to boil. Blanch the spare ribs for another 3-5 minutes.

Step 3
Cook the spare ribs, black-eyed peas, ginger, water and bring to boil on medium heat.

Step 4
Add bitter melon and pickled mustard cabbage. Reduce to medium low heat and cook for 1 hour. Ready to serve.
