Step 1
Peel, seed and mash the winter melon. Soak the dried shiitake mushrooms and julienne. Soak the dried scallops until soft and shred. Dice the shrimps and set aside.

Step 2
Soak the Japanese sea cucumber. Clean and blanch together with ginger, 2 tsp Chinese cooking wine and green onions. Julienne and set aside.

Step 3
Soak the Bird’s Nest thoroughly. Change water for 2 times. Clean the bird’s nest, drain and steam for 20 minutes.

Step 4
Marinate with ground white pepper, 1 tsp Chinese cooking wine and corn starch for 15 minutes.

Step 5
Bring chicken broth and mashed winter melon on medium high heat. Reduce to medium low heat. Add shiitake mushrooms, dried scallops, shrimps, Japanese sea cucumber and cook for 10 minutes.

Step 6
Add water chestnut water, mix well and cook until sticky. Add egg white and mix well gradually. Season with salt and ground white pepper if necessary.

Step 7
Remove from heat. Add bird’s nest and mix well. Ready to serve.
