Step by Step Instructions

Step 1
Prepare apple syrup:In a pot, combine the brown sugar, apple cider vinegar, apple juice, cinnamon sticks and butter and Bring to boil and reduce the heatto medium low. Cook for 45 minutes until the the sauce has reduces by 1/3.Discard the cinnamon stick and let cool.

Step 2
Pour the apple syrup to an air-tight container and keep in the fridge.

Step 3
Prepare waffle:In a bowl, mix together the warm water and dry yeast. Let rest for 10 minutes until bubbly.

Step 4
Sieve the all-purpose flour and corn meal. Add the salt, baking powder and sugarMix together and set aside.

Step 5
Place the yeast, eggs and milk into a mixer and mix well. Add the flour mixture and mix together.

Step 6
Mix in 170g melted butter, wrap with plastic and refrigerate overnight.

Step 7
Preheat the oven to 200°C. Place the bacon into the oven and bake for 10 minutes. Chop and set aside.

Step 8
Mix the proofed batter, brush the remaining melted butter on the waffle machine. Pour some batter and cook until the waffle is cooked. Transfer to the plate, sprinkle with bacon and chopped green onion.

Step 9
Serve with the apple syrup.
