Step 1
In a bowl, whisk together the balsamic vinegar, Dijon mustard and honey.

Step 2
Slowly whisk in the olive oil in a stream until combine. Season with salt and black pepper. Set aside.

Remove the seed and slice the cucumber. Cut the cherry tomatoes in halves.

Step 4
Cut the beetroot into pieces.

Step 5
In a mixing bowl, toss together the salad leaves, beetroots, buffalo cheese ball, cherry tomatoes and cucumber.

Transfer to the plate, drizzle the dressing and ready to serve.
