Banh Mi with Lemongrass Pork plus homemade carrot pickle

Bánh mì is a Vietnamese term for all kinds of bread. The word is derived from bánh (bread) and mì (wheat, also spelt mì in northern Vietnam). Bread, or more specifically the baguette, was introduced by the French during its colonial period. The bread most commonly found in Vietnam is a single-serving baguette, therefore the term bánh mì is synonymous with this type of bread. The bánh mì is usually more airy than its Western counterpart, with a thinner crust. It is sometimes metonymous with a food item known as a "Vietnamese sandwich" (or, in Louisiana, USA, as a "Vietnamese po' boy" or in Philadelphia, USA, as a "Vietnamese hoagie", for which the bánh mì serves as the bread wrapper.

Step by Step Instructions

Step 1
To make Lemongrass chicken Marinade: put all ingredients of chicken Marinade together then add the chicken into the brine, leave to the refrigerator at least 6 hours

Shred carrots, daikon, and add the salt and 2 tsp of sugar into them, mix well, after 30mins, squeeze to drain the carrot and daikon water by hand, then set aside.

To prepare the lukewarm water to dissolve the sugar, and add white vinegar, fish sauce.

To prepare a jar or container, put the garlic, chilly, vegetable into the container, and pour the brine, shake slightly, cover the lid, and leave to the refrigerator at least 1 hour.

To wash the all vegetables, and drain them, tomatoes cut into half , shred pepper, set aside.

To prepare a pan for deep frying the breads, pour the oil into the pan, and turn on the high heat to boil the oil till about 100 degree, put the bread into the pan, fry them till golden brown, then re
