Bamboo fungus sounds like a funny ingredient but Chinese loves it because it is rich in protein and low fat. They also has a unique crunchy texture that gives your taste buds a different experience.

Step by Step Instructions

Step 1
**Prepare the bamboo fungus** This will take at least 1 day to prepare. Soak the fungus in a bowl of water for 1 day, changing water every 2-3 hours until water is clear. After replacing the water until the water is no longer turning yellow, we trip the head and tail of the fungus. Soak in water again for another hour or so.

Step 2
**Prepare the pea vines** We usually like to prepare pea vines by simply bowling them in a pot of water and chicken powder. Then put the cooked pea vines onto a plate, creating a well in the center for the fungus.

Step 3
**Saute the bamboo fungus** In the same pot, boil 1-2 cups of water. Add fungus in the boiling water and cook for 5 minutes. Once the fungus are cooked, add a little salt to taste with chicken powder. Remove from heat and add the fungus on top of the pea vines.

Step 4
Using the left over water in the pot, we thicken the water by adding some corn starch to the sauce. Pour the clear sauce on top of the dish before serving.
