Preheat an oven to 180 ºC. Slice the button mushrooms. Chop the red bell pepper, yellow squash and red onion. Beat the eggs. Add whipping cream, milk, Italian seasoning, black pepper and salt. Combine well.

Step 2
In a pan, add some oil on medium heat. Add yellow squash, red onion, button mushrooms, red bell pepper, baby spinach and sauté until fragrant. Season with salt and black pepper.

Step 3
Pour into a baking tray. Sprinkle with cheddar cheese and add egg wash. Bake for 20-25 minutes and ready to serve.
