Baked Tomato Pork Chop with Rice is a classic local rice recipe. The rich ketchup, tender pork chop and aromatic fried rice make a perfect meal.

Step by Step Instructions

Step 1
Preheat the oven to 180°C. Slightly pound the pork chop and marinate with Chinese cooking wine, light soy sauce, corn starch and some white pepper for 10 minutes.

Step 2
In a pan, add some oil on a medium heat. Add the rice and cook until the rice is separate. Crack the egg in the middle and mix together with the rice. Season with salt and white pepper. Transfer to the baking dish.

Step 3
In the same pan, add some oil on a medium heat. Sear the pork chop until golden brown on both sides and fully cooked.

Step 4
Cut the pork chop into strip and place it over the rice.

Step 5
Prepare the tomato sauce. In a pan, melt the butter with some oil on a medium high heat. Sauté the onion until fragrant, add the chopped tomato, ketchup, Worcestershire sauce and sugar. Bring it to simmer and cook for 15 minutes until the sauce has thickened.

Step 6
Stir in the pineapple and pour it over the pork chop.

Step 7
Sprinkle the cheese over and bake it for 15 minutes or until the cheese has melted. Ready to serve.
