Baked Tapioca Pudding with Red Bean Paste

Step 1
Preheat the oven to 200°C. Bring a pot of water to boil. Add the tapioca pearl and cook for 10-12 minutes, keep stir to prevent it stick together

Step 2
Cover the lid and remove from heat. Let it sit until the tapioca turns to clear

Rinse it under cold water and set aside

Step 4
In a small bowl, add about 100mL of milk and mix it with custard powder and the egg

Step 5
In another pot, add the remaining milk, evaporated milk, butter and sugar. Bring it to simmer

Step 6
Add the custard mixture and cook until thicken

Step 7
Turn off the heat and add the tapioca pearl and mix together

Step 8
Pour one layer of the mixture into the ramekin

Step 9
Add the red bean paste in the middle. Add another layer of custard mixture about ¾ full

Place the ramekin in the oven and bake it for 15 minutes until golden brown
