Step 1
Preheat an oven to 170°C and cover a baking tray with foil.

Step 2
Combine well the shio koji and white miso.

Step 3
Rinse and pat the mackerels dry. Marinate with shio koji mixture for 30 minutes.

Step 4
Brush the baking tray with oil and place the mackerels on it. Bake for 12-15 minutes or until cooked.

Step 5
Put the mackerels and lemon into a lunchbox. Ready to serve.
