Baked Portobello Stuffed with White Truffle and Mashed Potato

Step 1
Preheat an oven to 175ºC. Cover a baking tray with foil and set aside. Peel and cut the potato into pieces. Bring a pot of water to boil. Add some salt, cook the potato until done and drain.

Step 2
Blend the potato and butter with a blender until smooth.

Step 3
Add milk and combine well. Add salt, black pepper, white truffle paste and mix well.

Step 4
Stuff the Portobello with potato mash and sprinkle with mozzarella cheese.

Step 5
Bake for 10 minutes or until golden yellow. Ready to serve.
