Baked Oyster with Egg

Step by Step Instructions

Step 1
Rinse the oyster with corn starch, salt and water for 2-3 times until no more slimy

Slice the Chinese donut

Step 3
Chop the shallot and cilantro

Step 4
Cut the salted egg yolk into small pieces

In a mixing bowl, beat the eggs and add the chicken broth to combine

In a pot, bring the water to boil and blanch the oyster for 20 seconds. Drain and pat dry

In a pan, add some oil on high heat. Sauté the shallot until fragrant then add the oyster and cook until the water has evaporated

Add white pepper to season

Transfer to the baking dish

Pour the egg mixture into the dish, sprinkle the salted egg yolk then lay the sliced Chinese donut on top

Cover with plastic wrap and steam it for 15 minutes

Remove the plastic. Brush some sesame oil on top

Preheat the oven to 200°C and bake it for 10 minutes

Sprinkle with cilantro and serve hot
