Baked Maple Syrup and Herb Chicken

Step 1
Chop the rosemary and garlic. Cut the onion into pieces. Preheat the oven to 200C. Cover the baking tray with foil.

Step 2
Mix together the rosemary, garlic, sea salt, black pepper and unsalted butter.

Step 3
Rinse and pat dry the chicken. Stuff with 2/3 herb butter and a lemon with holes punched.

Step 4
Tide the drumsticks with kitchen string. Marinate for at least 2 hours.

Step 5
Place the chicken and onion on the baking tray. Rub the whole chicken with the remaining herb butter and cover with foil. Bake for 40-45 minutes.

Step 6
Remove the foil. Brush the chicken with maple syrup and make for another 10-15 minutes or until golden brown. Ready to serve.
