Baked Durian with Tapioca Pudding

Step 1
Preheat the oven to 200°C.In a pot, bring the water to boil and cook the tapioca pearl for 10-12 minute and turn off the heat.

Step 2
Cover the lid and let it sit for 5 minutes or until the tapioca is clear.

Step 3
Rinse under cold water and set aside.

Step 4
In a bowl, add about 100mL milk and whisk together with custard powder and egg.

Step 5
In a pot, add the remaining milk, evaporated milk, butter, sugar and bring it to simmer.

Step 6
Add the custard mixture and cook until thickened.

Step 7
Remove from the heat. Add the tapioca pearl to the custard and mix well.

Step 8
Transfer a layer of custard to the baking dish then add the durian flesh. Add another layer of custard.

Step 9
Place the baking dish in the oven and bake it for 15-20 minutes or until golden brown.

Step 10
Ready to serve.
