Baked Cream of Pasta Soup with Puff Pastry

Step 1
Preheat the oven to 200°C. Slice the mushrooms and set aside.

Step 2
In a pot, bring the water to boil and add some salt. Cook the San Remo Small Shells until al dente.

Drain and set aside.

In a pan, melt the butter on a medium heat.

Add the onion and sauté until fragrant.

Increase to high heat. Add kernel corn, mushrooms and toss well.

Add all-purpose flour and combine until thickened.

Add chicken broth and water. Bring it to simmer.

Blend the soup with a blender until smooth.

Add whipping cream and mix together.

Add salt and black pepper. Bring it to simmer.

Add San Remo Small Shells and combine together.

Pour into a baking bowl to 80% full. Let cool for a while.

Brush the edge of the bowl with egg wash.

Place the puff pastry on top.

Seal the edges.

Brush with egg wash again.

Bake for 15 minutes or until the puff pastry turned golden brown.
