Baked Baguette Stuffed with Creamy Potato

Step 1
Slice off the top of the baguettes and gently remove the bread in the middle. Peel and dice the potatoes. Slice the button mushrooms. Dice the bacon and onion. Chop the rosemary and garlic.

Step 2
Preheat an oven to 200°C. Cover a baking tray with foil.

Step 3
In a pan, add bacon and sauté until fragrant on medium heat. Add garlic, onion and sauté until fragrant.

Step 4
Add potatoes and mushrooms. Stir-fry for 3-4 minutes.

Step 5
Add salt, black pepper, ground nutmeg, rosemary, milk and whipping cream. Bring to boil.

Step 6
Reduce to medium low heat, cover the lid and cook for 10-12 minutes.

Step 7
Remove the lid, mix well and cook until thickened.

Step 8
Stuff the baguette with potatoes. Sprinkle with mozzarella cheese. Bake for 8 minutes or until golden brown. Ready to serve.
