Avocado Chicken and Quinoa Salad

Using avocado to make salad can absorb its nutrition directly. Try mixing it with healthy quinoa and dried raspberry!

Step by Step Instructions

Step 1
Dice the avocado, red onion and Japanese cucumbers.

Step 2
Season the chicken breast with salt and black pepper.

Step 3
In a pot, add quinoa and water. Bring to boil on medium heat.

Step 4
Cover the lid, reduce to medium low heat and cook for 13-15 minutes. Remove from heat, let cool and set aside.

Step 5
In a pan, add some oil on medium heat. Add chicken breast and sear until golden brown on both sides. Add water and bring to boil. Cover the lid, cook until done and slice.

Step 6
Mix together avocado, red onion, Japanese cucumber, quinoa, dried raspberries, olive oil, lemon juice, salt and black pepper. Transfer to a plate.

Step 7
Place on top of the chicken breast. Sprinkle with crushed almonds and ready to serve.
