Recipe Details
This assorted vegetable soup is very easy to make with high nutritional value. Adding bay leaves and basil gives a more complex flavour to the soup.

Step 1
Peel and dice the potato and carrot. Dice the celery and onion. Chop the cabbage and garlic. Set aside. In a pan, add some oil on medium heat. Add garlic, onion and sauté until fragrant. Add carrot, celery, potato and stir-fry for 4 minutes.

Step 2
Add tomatoes, vegetable broth, bay leaves and dried basil. Mix well and bring to boil. Cover the lid, reduce to medium low heat and cook for 20 minutes.

Step 3
Add corn kernel, cabbage and cook for 10 minutes.

Step 4
Season with salt and black pepper. Ready to serve.
