Arancini with Avocado Tartar

Arancini is a famous Italian dish. It is fried rice ball, normally stuffed with ragù, mozzarella and peas and coated with breadcrumbs. This crispy rice ball with Mozzarella in the middle is a dish you should not miss.

Step by Step Instructions

Step 1
Dice the portobello mushrooms. Beat the eggs. Dice the Mozzarella cheese into 1cm cubes. Set aside.

Step 2
In a pan, add some olive oil andsauté the minced garlic, chopped shallots until fragrant. Add the mushrooms and fry for 1 minute.

Step 3
Add the Arborio rice and cook for 3 minutes. Add the chicken broth and cook on a low heat until the rice absorbed the broth. Add thewhipping cream until the rice has thickened. Add the chopped parsley and stir well. Remove from heat and let cool.

Step 4
Place the flour, breadcrumbs and eggs into 3 separate plates.

Step 5
Scoop the rice, stuff with a mozzarella cheese cube in the middle and form into a ball. Coat with flour, eggs, and breadcrumbs accordingly.

Step 6
In a pan, add enough oil for frying. Add the rice balls and fry until golden brown. Drain and set aside.

Step 7
Mash the avocado, add the Greek yogurt, mayonnaise and pickled cucumber. Serve the arancini with the avocado tartarand lemon wedge.
