Apricot and Pork Lung Soup

Step by Step Instructions

Step 1
Fit the pork lung to a tap, turn on water to force water into the lung to clean it. Poke some holes on the lung to let the water out. Repeat until the lung looks pink. Slice, blanch and drain.

Step 2
In a pan, sauté the ginger without any oil. Add the lung and stir until dry.

Step 3
Skin and core the ginkgo. Soak for 15 minutes.

Step 4
Rinse the chicken feet. Slice the lean pork and Chinese cured ham. Boil with 1.5-2L water, pork lung and ginkgo for 2 hours.

Step 5
Blend the sweet apricot with some water and sieve.

Step 6
Add the sweet apricot juice into the soup. Bring to boil and season with some salt. Ready to serve.
