Abalone with Oyster Sauce

Step 1
Rinse the abalone and remove the shell. Cut half of the leek to slices, another half to shreds.

Step 2
Blanch the Chinese cabbage, drain and set aside.

Step 3
Blanch the abalone with Shaoxing wine for 4 minutes.

Step 4
Sauté the leek and ginger shreds over low heat.

Step 5
Add oyster sauce, white sugar, soy sauce and water. Bring to simmer.

Step 6
Mix in potato starch thickener and cook until the sauce is thickened. Add abalone into the pan and cook for 1 minute. Ready to serve!
