Bite-sized Avocado Scallop Toast

Fresh spinach leaves covered with avocado mud full, plump scallop, a toast if you don't like the taste of it ~

Step 1
Slice the baguette. Rinse the baby spinach and pat dry with Vinda Kitchen Towel.

Step 2
Spoon and mash the avocado. Add lemon juice, salt and black pepper. Mix well to make the avocado sauce.

Step 3
Pat dry the scallops with Vinda Kitchen Towel. Season with salt and black pepper.

Step 4
In a pan, add some olive oil on a medium heat. Add baguette and sear until golden brown on both sides. Transfer to a plate and set aside.

Step 5
In the same pan, add some olive oil. Add scallops and sear on a high heat until golden brown on both sides.

Step 6
Place baby spinach, avocado sauce, scallop and salmon roe on the baguette accordingly. Ready to serve.
