Classic Sweet Potato Casserole

Made with mashed sweet potatoes and marshmallow topping, this classic Sweet Potato Casseroleis so gooey and crunchy. It willbecome your new favourite!

Step by Step Instructions

Step 1
Preheat the oven to 175°C and prepare a baking tray (28cm x 20cm).Rinse and peel the sweet potatoes. Cut into halves.

Step 2
Place into a steamer and steam for 40 minutes until completely cooked. Mash the sweet potatoes and set aside.

Step 3
Use a blender to blend the mashed sweet potato and ice cream together.

Step 4
Add whipping cream, sour cream and mix together. Pour onto the tray, place into the oven and bake for 30 minutes.

Step 5
Place the marshmallow onto the mashed sweet potato while each is 1cm apart.

Step 6
Place into the oven under 200°C and bake for 6 minutes until golden brown. Cut into slices.

Step 7
Sprinkle with almond slices. Ready to serve.
