Step 1
Preheat the oven to 180ºC.In a bowl, whisk together the mayonnaise, Dijon mustard, 1/4 lemon juice, salt and black pepper.

Step 2
Place the fillet on the parchment paper. Season the fillet with salt, black pepper.

Step 3
Add the fresh thyme and slice the remaining lemon and place it over the fillet.

Step 4
Wrap the parchment paper and place in the oven and bake it for 8-10 minutes until the fillet is cooked.

Step 5
Let it rest for 5 minutes, unwrapped and serve with mustard mayo.
