Creamy Chicken and Mushroom Soup

Step by Step Instructions

Step 1
Dice the onion and slice the mushroom.

Step 2
Cut the chicken into small pieces and season with salt and black pepper

Step 3
Slightly dredge the chicken with some flour

Step 4
In a pot, melt the butter with some oil on a medium high heat. Sauté the garlic and onion until fragrant

Step 5
Add the chicken and cook until golden brown

Step 6
Add the mushroom and cook until tender. Deglaze with white wine and add the flour to make into a roux

Step 7
Add the chicken broth and stir until there is no lump

Step 8
Bring the broth to boil, add the bay leaf and thyme. Reduce the heat to medium and cook for 30 minutes

Step 9
Add the whipping cream and cook for another 10-15 minutes until the soup has thickened.

Step 10
Discard the bay leaf and thyme sprig

Step 11
Season with salt and black pepper. Ready to serve
