Step 1
Soak the soy bean and red dates for 20 minutes. Drain and set aside. Peel and slice the ginger.

Step 2
Bring a pot of water to boil and blanch the pork knuckle. Drain and set aside.

Step 3
In a pot, add the pork knuckle, ginger, soy bean, enough water and bring it to boil over high heat. Reduce the heat to low, cover the lid and cook for 2 hours.

Step 4
Add the red dates and cook for another 30 minutes.

Step 5
Season with salt and ready to serve.
