Curry Coconut Chicken Stew

Step by Step Instructions

Step 1
Cut the chicken into pieces and marinate with Chinese cooking wine, light soy sauce, sugar, salt and pepper for 15-20 minutes

Step 2
Cut the carrot and onion into medium size

Step 3
Peel and cut the potatoes in medium sizes and place in water to prevent turning brown

Step 4
Slice the ginger and cut the green onion into section

Step 5
In a pan, add some oil on a medium high heat. Sauté the ginger and onion until fragrant add the chicken and cook until golden brown

Step 6
Add the curry powder, red pepper flake, chicken broth, bay leaf, potato and carrot

Step 7
Bring it to boil and reduce the heat to medium, cover the lid and cook until the potato is tender about 25 minutes

Step 8
Add the coconut milk and cook for another 5 minutes until the sauce has reduce by half

Step 9
Add the sesame oil, salt, white pepper and green onion

Step 10
Toss well and ready to serv5
