Stir-fried Razor Clam with XO Sauce

If you want to cook seafood, razor clam is pretty easy to handle. If get it fresh, then use salt water to help remove sand, but if is frozen then is more convenient. Only need to thaw, clean and cook. This time will use razor clam to make a Stir-fried Razor Clam with XO Sauce.

Peel and slice the onion

Slice the red chili pepper

Mince the garlic

Clean the razor clam and remove the shell. In a pot, bring the water to boil and blanch the razor clam for 1 minutes, drain and set aside

In a pan, add some oil on a medium high heat. Sauté the onion and garlic until fragrant

Step 6
Add the XO sauce and the razor clam. Quick stir

Step 7
Add the Chinese cooking wine, light soy sauce, sugar, salt and white pepper to taste

Step 8
Add the slice pepper, stir well and ready to serve
