Walnut Sweet Soup with Lotus Seed

The bitterness on the lotus is the core. Remove the core on the lotus seed and add the walnut, blend into a paste and it becomes a delicious dessert.

Step by Step Instructions

Step 1
Soak the lotus seed for 3 hours, remove the seed

Step 2
Cook it in water for 30 minutes, drain and set aside

Step 3
Soak the rice with 4 tbsp of water for at least 3 hours

Step 4
In a pot, bring the water to boil and blanch the walnut for 2 minutes, drain and pat dry

Step 5
In a dry pan, toast the walnut until fragrant, remove from the heat

Step 6
Add the walnut and 1L of the water and blend until smooth

Step 7
Strain it with the fish bag and save the liquid

Step 8
Place the walnut juice back to the blender. Add the remaining of the water and blend it again

Step 9
Strain one more time

Step 10
Place the rice with the liquid in the blender and blend until smooth. Strain it with the fish bag and save the liquid. Set aside

Step 11
Transfer the walnut juice to the pot, add the rock sugar and cook it until the sugar is completely dissolved

Step 12
Stir in the rice liquid, make sure keep stir to avoid lump

Step 13
Add the lotus seed and bring the sweet soup to simmer, add the evaporated milk

Mix well and ready serve
