Step 1
Combine the cooked sushi rice, sugar, salt and rice vinegar.

Step 2
Cut the sushi nori into fan shape. Slice the eel.

Step 3
Add chili garlic sauce, tabasco, ichimi togarashi and mirin with mayonnaise

Step 4
Place the sushi nori on table and spread with cooked sushi rice.

Step 5
Place shiso, sliced eel and sauce on top.

Step 6
Roll it and plate up. Serve with the sauce, teriyaki sauce, marinated sliced ginger and wasabi.
