Linguine with Creamy Uni Sauce

Step by Step Instructions

Step 1
In a pot, bring the water to boil, add some salt. Cook the pasta until soft about 8-10 minutes

Step 2
In a blender, combine half of the uni, egg yolk, butter and 20mL cream

Step 3
Blend until smooth

Step 4
Run it through the strainer

Step 5
Add the remaining heavy cream, mix well

Step 6
In a sauce pan, bring the uni sauce to simmer on low heat

Step 7
As soon as the sauce becomes hot with bubbles around the edges, turn off the heat immediately. Toss the pasta and gently mix together

Step 8
Transfer to the plate, top with uni, caviar and serve
