Seafood Porcini Mushroom Risotto

Seafood Risotto is a great dish to make if you want a rich a satisfying meal. The key to making a delicious seafood risotto is getting fresh seafood and also quality butter. For something extra fancy, we gave this recipe lots of fragrant herbs that will be sure to stimulate your taste buds!

Step by Step Instructions

Step 1
Slice the garlic

Step 2
Finely minced the onion

Step 3
Soak the porcinis in 500mL hot water for 20-30 minutes and save the liquid

Step 4
In a pot, combine the chicken broth and the porcini liquid and bring it to simmer

Step 5
In a skillet, add oil on a medium high heat, sear the prawn and scallop until golden brown remove from the heat and set aside

Step 6
In a same skillet, add butter on a medium heat. Sauté the garlic and onion until fragrant

Step 7
Add the Arborio rice and mix together. Deglaze with white wine and add the mushroom, mix well

Step 8
Slowly ladle the broth to the rice, make sure the stock level has just covered the rice. Then reduce to low heat. When the liquid is absorbed by the rice, add more stock

During the last time, when the rice is almost at the ideal texture, add the fennel seed and the seafood back. Stir until the liquid is half way absorbed about 3 minutes

When the rice is soft and tender, add the cheese and keep stirring until the liquid is almost absorbed by the rice
