Chicken Wings and Potato Stew
Recipe Details
This is a classic Chinese homemade recipe popular among many Chinese families almost like a “Comfort Food” for us growing up as kids. For those who are more health conscious, try substituting the chicken wings with skinless chicken tights. Chicken breasts may be less suitable for this recipe because the longer cooking time may make the breast meat dry.

Step by Step Instructions

Step 1
Wash and marinate the wings for an hour (or overnight is possible) Wash and peel (optional) the potatoes. Cut into medium size chunks.

Step 2
In a frying pan, heat some oil on high heat. Add the wings.

Step 3
Sear until golden brown, about 3 minutes on each side. Remove from heat. Set aside.

Step 4
In a frying pan or wok, heat up some oil on medium high heat. Add the sliced ginger and garlic to cook until aromatic. Add the potatoes.

Step 5
Pan fry them until slightly golden. This will help keep the potatoes maintain their shapes when we cook them in a stew later.

Step 6
Add the wings into the pan of potatoes. Add enough water to cover the ingredients half way.

Step 7
Bring to a boil and simmer on low heat for 30 minutes with the lid covered.

Step 8
Then remove the lid and cook for another 10-15 minutes on medium heat to reduce the water.

Step 9
Season to taste with some salt. Serve over a plate of white rice.
