Crabs and Vermicelli in XO Sauce

Step by Step Instructions

Step 1
Soak glass noodles into water for 30 minutes until soft, cut in half and set aside.

Step 2
Add oyster sauce, dark soy sauce and white pepper into the chicken stock well.

Step 3
Rinse and pet dry the crab pieces, coat with a thin layer of corn starch.

Step 4
Heat the wok over medium heat, add the crab pieces and shallow fried until halfway done. Transfer to plate and set aside.

Step 5
Remain 1 tbsp of oil in the wok. Sauté the minced ginger, shallot, and garlic over medium heat until aromatic.

Step 6
Add XO sauce and stir well. Return the crab into the wok and toss until it’s well coated with the sauce.

Step 7
Pour in the chicken stock mixture and bring it to boil, cover with lid and cook for 2 minutes.

Step 8
Add in sugar

Step 9
Push the crab pieces to the side and add in glass noodles. Then cook until the sauce reduced.

Step 10
Add chopped green onion and toss a few times, dish out and serve immediately.
