Step 1
Fry the chicken pieces in a 180° until golden brown, pick up and set aside

Step 2
Pour oil into the pot. Add sliced ginger, star anise, garlic, green onion knot, pepper, dried chili, and bean paste, dry fry, then add chicken pieces and fry until fragrant

Step 3
Season with oyster sauce, light soy sauce, dark soy sauce, salt, chicken powder, sugar, and vinegar and stir-fry evenly

Step 4
Add uncovered water to a high heat pot, then turn to low heat and simmer for 15 minutes

Step 5
Add Shaoxing wine, Beijing onion, Hangzhou pepper, Meiren pepper, millet pepper, chili oil, and Chinese pepper oil, and cook until the sauce is absorbed. Ready to serve.
